Le tiramisu

You'll need:

An electric mixer (you can do everything with a whisk, but it'll take more elbow grease)

A whisk

3 mixing bowls

A coffee maker (or can be replaced by instant coffee)

A spatula

8 ramekins or a large dish (depends on how you want to serve your tiramisu)

A tea strainer


For 8 people

Ingredients:

4 fresh eggs

110g of sugar (which can be replaced by Xylitol)

250g of mascarpone

A packet of finger biscuits (Boudoir) 

4 to 5 espressos (small cups) 

Cocoa powder

 

Instructions:

  1. Make the coffee

  2. Separate the yolks from the egg whites

  3. In a bowl, mix the egg yolks with the sugar.

  4. Add the mascarpone and stir in.

  5. In another bowl, whisk the egg whites together (by using an electric mixer or a whisk)

  6. Pour the egg whites gently into the egg yolk/sugar/mascarpone mixture and mix delicately with the help of a spatula.

  7. Dip the finger biscuits in the coffee for about 20 seconds (it is important to avoid them being too soggy) then place them at the bottom of the ramekins (or dish, as you wish) as you go along.

  8. Cover with the egg yolk/sugar/mascarpone mixture.

  9. Repeat the operation by alternating finger biscuits (soaked in coffee) with the mixture.

  10. Finish with a layer of mixture.

  11. Chill for at least 3-4 hours

  12. Just before serving your tiramisu to your guests, sprinkle the ramekins with cocoa powder by using a tea strainer.

Il vous faudra : 

un batteur électrique (vous pouvez tout faire au fouet mais cela demandera plus d’huile de coude) 

un fouet

trois saladiers

une cafetière (ou peut être remplacé par du café soluble) 

une maryse

8 ramequins ou un grand plat (Cela dépend comment vous voulez servir votre tiramisu à vos invités)

une mini passoire à maille fine (ou une boule à thé)


Pour 8 personnes

Ingrédients :

4 oeufs frais

110g de sucre (que l’on peut remplacer par du Xylitol)

250g de mascarpone

Un paquet de biscuit à la cuillère

4 à 5 expressos (petites tasses de café)

Cacao en poudre

 

Instructions :

  1. Faire couler le café

  2. Séparer le jaune des blancs des oeufs

  3. Dans un saladier, mélanger les jaunes d’oeuf avec le sucre.

  4. Rajoutez-y la mascarpone et mélangez

  5. Dans un autre saladier, montez les blancs en neige.

  6. Versez les blancs délicatement au mélange jaunes d’oeuf/sucre/mascarpone et mélangez délicatement à l’aide d’une maryse.

  7. Trempez les biscuits cuillères dans le café environ 20 secondes (Il faut éviter qu’ils soient trop cassants) puis disposez les au fond des ramequins (ou du plat, selon votre choix)  au fur et à mesure.

  8. Tapissez du mélange jaunes d’oeuf/sucre/mascarpone

  9. Renouvelez l’opération en alternant biscuits cuillères (trempés dans le café) avec le mélange jaunes d’oeuf/sucre/mascarpone.

  10. Finir avec une couche de crème.

  11. Mettre au frais au moins 3-4 heures

  12. Juste avant de servir vos tiramisu à vos invités, saupoudrer les ramequins de cacao en poudre. à l’aide d’une mini passoire à maille fine (ou d’une boule à thé).
